What wine goes with burger?

A well-made burger - beef, fat, char, salt, possibly cheese and a bun soaking up the juices - is a different animal from a fine-dining steak. It wants something gutsy, a bit rustic, and unafraid of being fun. This is not Barolo territory.

The bun is a factor. Bread absorbs richness and changes the body of the mouthful. Cheese (especially American, cheddar, or blue) adds fat and salt. Ketchup and mustard add sweetness and sharpness. All of these shift the wine equation.

The best matches

The best burger wine in the world, probably. The pepper, dark plum, and violet notes in a Mendoza Malbec meet the char and beef fat with exactly the right energy. It doesn't overthink it. A simple, well-priced Malbec beats an expensive Cabernet here.

California Zinfandel with a smash burger is an excellent match. The jammy, spiced, slightly rustic character of the grape handles the charred edges, the fatty beef, and a generous spread of cheddar without straining.

Syrah / Shiraz

About this grape

Barossa Shiraz in particular. Big, opulent, slightly jammy - it's a bit much for elegant food but it's exactly right for a loaded burger. The bacon option unlocks this match completely.

Barbera

For a more restrained option. Italian Barbera d'Asti has the acidity to cut through fat, low tannin so it doesn't overwhelm, and enough dark fruit to hold its own. A slightly more European approach to a very American meal.

What to avoid

Very elegant or expensive reds. Burgundy with a burger is technically fine but it's a mismatch of register. The wine will taste odd against the char and condiments and the food will make the wine seem expensive for no reason.

One thing to keep in mind

Skip the wine entirely with a really good craft beer-battered onion ring. Some things are pairings of place, not principle.
