Vegetables

What wine goes with mushrooms?

Mushrooms are one of the few vegetables that genuinely demand wine, and they're one of the most interesting pairing challenges on the table. Umami-rich, earthy, savoury - they call for wines that echo those qualities rather than contrast them.

The variety and preparation change everything. A raw button mushroom in a salad is a minor character. A bowl of porcini risotto or a slow-braised wild mushroom on toast is a full-flavoured dish that needs a wine to match.

The best matches

1

The instinctive match, particularly Burgundy, which has the same forest floor, truffle, and earthy character as wild mushrooms. The terroir of a village Gevrey-Chambertin genuinely tastes like the forest it sits in. With a mushroom risotto, this is hard to beat.

2

Nebbiolo (Barolo / Barbaresco)

Barolo's signature truffle and dried rose notes lock onto mushroom dishes in a way that feels preordained. A 10-year-old Barolo with a porcini risotto is one of the great matches in Italian food and wine culture.

3

White Burgundy (village-level Chardonnay)

About this grape

For creamy mushroom preparations - mushroom soup, a cream sauce, mushroom vol-au-vent. The lactic, buttery character of a lightly oaked Chardonnay complements the cream and the earthiness without competing.

4

Gruner Veltliner

For lighter mushroom dishes or mushrooms as a component rather than the star. The white pepper and mineral character of Austrian Gruner Veltliner bridges earthy flavours well and cuts through any cream.

What to avoid

Very fruity, simple reds - basic Merlot or supermarket Pinot Grigio. The fruit-forward sweetness tastes out of place next to earthy, savoury mushroom dishes.

One thing to keep in mind

If you're using dried mushrooms (porcini, morel), the earthy concentration intensifies. Move up in wine quality accordingly - a porcini broth deserves the Barolo.
