What wine goes with oysters?
Oysters have the most defined wine pairing in the whole canon. It's Muscadet or Chablis, almost without exception, and there are actual geological reasons for it. The chalky, mineral character of those wines mirrors the minerality of the sea and the shell.
The saline, iodine quality of a live oyster demands something with matching mineral precision. Fruit-forward wines taste sweet and wrong. Oak tastes clumsy. What works is lean, high-acid, mineral white wine.

Muscadet (Melon de Bourgogne)
The traditional pairing from the Loire Valley, where the Atlantic oyster beds and the Muscadet vineyards are practically next to each other. Aged sur lie (on the lees), Muscadet develops a creamy yeast character that contrasts perfectly with the briny, raw texture of the oyster. One of the clearest examples of regional pairing logic.
Chablis
About this grapePremier cru Chablis has a flint-and-chalk minerality that was made for oysters. The Kimmeridgian limestone in the Chablis vineyards contains fossilised oyster shells - the same material the modern oysters grow on. This isn't wine marketing; it genuinely produces a wine that echoes what you're eating.
Champagne (Blanc de Blancs)
The bubbles and the fine acidity of a Blanc de Blancs Champagne are excellent with oysters. More festive than Chablis and worth it when the occasion calls for it. Grand Cru Blanc de Blancs from Avize or Mesnil-sur-Oger is one of the great oyster pairings.
Sauvignon Blanc (Sancerre)
About this grapeThe Loire is oyster country, and Sancerre is the other great Loire white. Flinty, precise, and with the herbal edge that ties into the green, briny notes in a fresh oyster.
What to avoid
Red wine entirely. Tannin and raw oysters produce a genuinely unpleasant metallic reaction. Oak-heavy whites also don't work - the butter and vanilla overpower the delicacy of the shellfish.
One thing to keep in mind
Serve everything cold. The wine should be at 8°C, the oysters on ice. Anything warmer and the match degrades quickly.
